  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)
  • Cooking spray or additional butter for greasing

Instructions
 

  • Gather all the ingredients listed above and have measuring cups and spoons handy.
  • In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt. In another bowl, mix the wet ingredients: buttermilk, egg, melted butter, and vanilla extract. Stir until smooth and creamy, then pour the wet mixture into the dry ingredients and gently stir until just combined.
  • Preheat your oven to 350°F (175°C) and grease your mini muffin tin with cooking spray or butter.
  • Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full. Bake for 10-12 minutes until golden brown and a toothpick comes out clean.
  • Let the pancake poppers cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Serve warm with your favorite toppings.
