Base Ingredients
- 4 large russet potatoes Peeled and diced
- 1 medium onion Chopped
- 3 cloves garlic Minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon Crumble
- 1/4 cup green onions Sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper optional
Peel and dice the russet potatoes into small cubes and rinse under cold water.
In a large pot, combine the diced potatoes, chopped onion, minced garlic, and chicken broth. Add salt, black pepper, paprika, and cayenne pepper. Bring to a boil over medium-high heat, then reduce to low and simmer for 20-25 minutes until potatoes are tender.
