Brussels sprouts

  • 1 pound Brussels sprouts, trimmed and halved
  • 1 tablespoon olive oil For roasting

  • 1/2 cup fresh cranberries Can use dried for sweetness
  • 1/4 cup pure maple syrup For the glaze
  • 1/4 cup fresh orange juice For the glaze

  • 1/2 teaspoon ground cinnamon For warmth
  • 1/4 teaspoon nutmeg For flavor enhancement
  • 1 tablespoon chopped fresh parsley For garnish

Instructions
 

  • Prepare the Brussels sprouts by trimming and halving them.
  • Make the glaze by combining cranberries, maple syrup, orange juice, orange zest, cinnamon, and nutmeg in a saucepan. Heat for 5-7 minutes until cranberries burst.
  • Combine halved Brussels sprouts with olive oil, salt, and black pepper in a bowl and toss to coat.
  • Spread Brussels sprouts on a baking sheet and roast at 400°F for 20-25 minutes, stirring halfway through.
  • Drizzle the glaze over the roasted Brussels sprouts and return to the oven for an additional 5 minutes.
  • Garnish with chopped parsley and serve.
