Pasta and Vegetables

  • 8 ounces penne pasta This pasta shape holds the sauce well.
  • 12 ounces kielbasa, sliced The star of the dish, adds savory flavor.
  • 1 tablespoon olive oil Used for sautéing.
  • 1 medium onion, diced Provides a sweet and aromatic base.
  • 2 cloves garlic, minced Enhances overall flavor.
  • 1 bell pepper diced (any color) Adds color and crunch.
  • 14.5 ounces diced tomatoes, canned, undrained Adds moisture and tangy flavor.
  • 2 cups chicken broth Essential for cooking the pasta.
  • 1 teaspoon Italian seasoning Brings a classic Italian taste.
  • 0.5 teaspoon black pepper Adds mild heat.
  • 1 cup frozen peas Adds color and sweetness.
  • 0.5 cup grated Parmesan cheese Adds creaminess.

Instructions
 

  • Gather all ingredients and have them ready.
  • Heat olive oil in a large pot over medium heat. Add sliced kielbasa and cook for 5 minutes until browned. Remove and set aside.
  • In the same pot, add diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add minced garlic and cook for 1 minute.
  • Add uncooked penne pasta, diced tomatoes, and chicken broth. Stir to combine and bring to a boil.
  • Reduce heat to low, cover, and simmer for 12-15 minutes, stirring occasionally.
  • Add kielbasa and frozen peas back into the pot. Stir and heat for an additional 2-3 minutes. Stir in grated Parmesan cheese until melted.
  • Serve hot, garnished with fresh parsley.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days.
