Instructions
Prepare all ingredients by washing and chopping the vegetables.
Heat olive oil in a large pot over medium heat and brown the beef on all sides for 5-7 minutes.
Sauté chopped onion and minced garlic for 3-4 minutes until the onion is translucent.
Combine browned beef, sliced carrots, celery, diced potato, undrained diced tomatoes, beef broth, frozen green beans, corn, thyme, basil, salt, pepper, and bay leaves in the pot.
Bring to a boil, then reduce heat to low and let simmer for 90 to 120 minutes.
