Vegetables and Beef

  • 2 tablespoons olive oil
  • 1 pound beef stew meat, cut into 1-inch cubes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 medium potato, diced
  • 14.5 ounces can diced tomatoes, undrained
  • 4 cups beef broth
  • 1 cup frozen green beans
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 leaves bay leaves

Instructions
 

  • Prepare all ingredients by washing and chopping the vegetables.
  • Heat olive oil in a large pot over medium heat and brown the beef on all sides for 5-7 minutes.
  • Sauté chopped onion and minced garlic for 3-4 minutes until the onion is translucent.
  • Combine browned beef, sliced carrots, celery, diced potato, undrained diced tomatoes, beef broth, frozen green beans, corn, thyme, basil, salt, pepper, and bay leaves in the pot.
  • Bring to a boil, then reduce heat to low and let simmer for 90 to 120 minutes.
