Instructions
 

  • Prepare the crust by mixing Biscoff cookie crumbs and melted butter, then press into a 9x9-inch baking dish and chill for 15 minutes.
  • Make the cheesecake filling by beating cream cheese until smooth, then adding powdered sugar, Biscoff cookie butter, and vanilla extract.
  • Whip the heavy cream until stiff peaks form and gently fold it into the cheesecake mixture.
  • Pour the cheesecake mixture over the chilled crust, smooth it out, and sprinkle crushed Biscoff cookies on top.
  • Cover and chill in the refrigerator for at least 4 hours or until set.
  • Cut into squares and serve chilled.
