Instructions
 

  • Prepare all ingredients by washing and dicing the potatoes, chopping the onion and bell pepper, and mincing the garlic.
  • Heat olive oil in a large skillet over medium heat. Add onion and bell pepper, sauté for 3-4 minutes until softened. Add garlic and ground beef, cook for 5-7 minutes until browned.
  • Add diced potatoes to the skillet, stirring to mix with beef and vegetables.
  • Add diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Stir until spices are evenly distributed.
  • Bring to a gentle simmer, cover, and cook for 15-20 minutes, stirring occasionally.
  • Sprinkle cheddar cheese on top, cover, and let sit for 2-3 minutes until cheese melts. Garnish with cilantro before serving.
