Heat a large skillet over medium heat. Add ground beef, diced ham, and chopped onion. Cook for 5-7 minutes until beef is browned and onions are translucent.
Add minced garlic, Worcestershire sauce, Dijon mustard, salt, black pepper, and paprika. Stir well and cook for another 2-3 minutes. Remove from heat and let cool slightly.
On a lightly floured surface, roll out each sheet of thawed puff pastry to about 1/8 inch thick. Cut into 3-inch squares.
Place about a tablespoon of the cooled filling in the center of each pastry square. Fold over to form a triangle and press edges to seal. Crimp edges with a fork.
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Place puffs on the sheet and brush tops with beaten egg. Sprinkle sesame seeds if desired.
Bake for 20-25 minutes until golden brown and puffed up. Let cool for a few minutes before serving.
