Instructions
 

  • Prepare the chicken by rinsing it under cold water and patting it dry. Cut into smaller pieces if desired.
  • In a large skillet, heat olive oil over medium heat. Sauté diced onion for 5 minutes until translucent. Add minced garlic, ground cumin, dried oregano, smoked paprika, and red pepper flakes. Cook for another minute.
  • Transfer the sautéed mixture to a slow cooker. Add chicken, white beans, diced tomatoes, chicken broth, and corn. Season with salt and pepper. Stir well.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  • Once cooked, shred the chicken and return it to the chili. Stir in chopped parsley and lemon juice.
