Base Ingredients
- 1 cup brown rice rinsed
- 1 can chickpeas 15 ounces, drained and rinsed
- 1 can black beans 15 ounces, drained and rinsed
- 1 cup cherry tomatoes halved
- 1 unit cucumber diced
- 1/4 cup red onion finely chopped
- 1/4 cup fresh parsley chopped
- 1/4 cup feta cheese crumbled
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Cook the brown rice by rinsing it under cold water, then combine with two cups of water in a pot. Bring to a boil, reduce heat, cover, and simmer for 40-45 minutes.
Prepare the beans by draining and rinsing canned chickpeas and black beans under cold water.
In a large mixing bowl, combine chickpeas, black beans, cherry tomatoes, cucumber, red onion, and parsley. Toss gently.
In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper. Pour over the bean and vegetable mixture and toss gently.
Add the cooked brown rice to the mixing bowl and gently fold it into the mixture. Serve topped with crumbled feta cheese.
