Ingredients
  

Base Ingredients

  • 1 cup brown rice rinsed
  • 1 can chickpeas 15 ounces, drained and rinsed
  • 1 can black beans 15 ounces, drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 unit cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Cook the brown rice by rinsing it under cold water, then combine with two cups of water in a pot. Bring to a boil, reduce heat, cover, and simmer for 40-45 minutes.
  • Prepare the beans by draining and rinsing canned chickpeas and black beans under cold water.
  • In a large mixing bowl, combine chickpeas, black beans, cherry tomatoes, cucumber, red onion, and parsley. Toss gently.
  • In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper. Pour over the bean and vegetable mixture and toss gently.
  • Add the cooked brown rice to the mixing bowl and gently fold it into the mixture. Serve topped with crumbled feta cheese.
