Instructions
 

  • Cut the chicken into bite-sized pieces and season with garlic powder, onion powder, oregano, paprika, salt, and pepper.
  • Chop the vegetables: slice the bell peppers, cut the zucchini into rounds, and halve the cherry tomatoes.
  • If time allows, marinate the chicken for 15-30 minutes in the refrigerator.
  • Heat olive oil in a skillet over medium-high heat and cook the chicken for 5-7 minutes until browned.
  • Add the bell peppers and zucchini, stir-fry for 3-4 minutes until tender-crisp.
  • Stir in cherry tomatoes and spinach, cooking for an additional 2 minutes until spinach wilts.
  • Remove from heat, sprinkle with feta cheese and parsley, and squeeze lemon juice over the top.
