Instructions
 

  • Marinate the chicken by mixing olive oil, garlic powder, onion powder, oregano, paprika, salt, and pepper. Coat the chicken and let it marinate for at least 15 minutes.
  • Cook the marinated chicken on a preheated grill for 6-7 minutes on each side until the internal temperature reaches 165°F. Let it rest for 5 minutes before slicing.
  • Prepare the vegetables by combining cherry tomatoes, cucumber, red bell pepper, and red onion in a large bowl. Add chopped parsley and toss gently.
  • Assemble the bowls by dividing quinoa among four bowls, topping with sliced chicken, vegetable mixture, and crumbled feta cheese. Drizzle with lemon juice if desired.
