Instructions
 

  • Gather all your ingredients and lay them out for easy access.
  • Cut the chicken into bite-sized pieces and set aside.
  • In a large pot, heat olive oil over medium heat. Sauté diced onion for 5 minutes until translucent, then add garlic, carrots, and celery. Cook for another 5 minutes.
  • Add chicken pieces to the pot and cook for 5-7 minutes until no longer pink. Pour in chicken broth, add thyme, oregano, and red pepper flakes, and stir.
  • Bring to a boil, then reduce heat and let it simmer for 15 minutes.
  • Stir in heavy cream and frozen peas, cooking for an additional 5 minutes. Season with salt and pepper to taste and garnish with parsley before serving.
