- 1 pound boneless, skinless chicken breasts
- 6 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen peas
- 1 cup cooked pasta (such as rotini or penne)

- Fresh parsley, chopped (for garnish)
Start by ensuring your chicken breasts are clean and ready to go. If you prefer, you can trim any excess fat. Set the chicken aside while you work on the vegetables.
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic, sliced carrots, and celery. Cook for another 5 minutes.
Add the dried thyme, oregano, and optional red pepper flakes. Stir well to combine. Gently place the chicken breasts into the pot and pour in the chicken broth, ensuring the chicken is fully submerged.
