- 3 medium apples, cored and cut into wedges
- 4 medium carrots, peeled and sliced into 1-inch pieces
- 3 tablespoons olive oil
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground cinnamon
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
Preheat your oven to 400°F (200°C).
Core the apples and cut them into wedges. Peel the carrots and slice them into 1-inch pieces.
In a large mixing bowl, combine olive oil, maple syrup, Dijon mustard, salt, black pepper, ground cinnamon, and thyme. Whisk until well blended.
Add the apple wedges and carrot pieces to the bowl with the glaze. Toss gently until evenly coated.
Spread the coated apples and carrots in a single layer on a baking sheet lined with parchment paper. Roast in the oven for 25-30 minutes.
Remove from the oven and let cool for a few minutes before serving.
