  • 3 medium apples, cored and cut into wedges
  • 4 medium carrots, peeled and sliced into 1-inch pieces
  • 3 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cinnamon
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Core the apples and cut them into wedges. Peel the carrots and slice them into 1-inch pieces.
  • In a large mixing bowl, combine olive oil, maple syrup, Dijon mustard, salt, black pepper, ground cinnamon, and thyme. Whisk until well blended.
  • Add the apple wedges and carrot pieces to the bowl with the glaze. Toss gently until evenly coated.
  • Spread the coated apples and carrots in a single layer on a baking sheet lined with parchment paper. Roast in the oven for 25-30 minutes.
  • Remove from the oven and let cool for a few minutes before serving.
