Dry Ingredients
- 2.5 cups all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon salt
Wet Ingredients
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
Additional Ingredients
- 1 cup powdered sugar
- 2 tablespoons milk
- food coloring red and green recommended
Preheat your oven to 350°F. In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, beat the softened butter and granulated sugar together for 3-4 minutes until light and fluffy.
Add the egg, vanilla extract, and almond extract to the butter mixture and mix until smooth.
Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
Divide the dough in half. Color one half red and the other half green. Roll each into a rectangle about 1/4 inch thick.
Stack the green dough on top of the red dough, press together, and roll tightly into a log. Wrap in plastic wrap and chill for at least 1 hour.
Slice the chilled log into 1/4 inch thick rounds and place on baking sheets. Bake for 10-12 minutes until edges are lightly golden.
Allow cookies to cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
