Ingredients
  

Potatoes

  • 2 large russet potatoes, diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup cooked ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss diced russet potatoes with olive oil, garlic powder, paprika, chili powder, salt, and pepper until well-coated.
  • Spread the potatoes in a single layer on a baking sheet lined with parchment paper and bake for 25-30 minutes, flipping halfway through.
  • While the potatoes are baking, heat cooked ground beef or turkey in a skillet over medium heat until warmed through.
  • Once the potatoes are done, assemble your taco bowl starting with a base of crispy potatoes, then layer on the ground meat, black beans, corn, shredded cheddar cheese, diced tomatoes, and avocado.
  • Top each bowl with a dollop of sour cream, chopped fresh cilantro, and a squeeze of lime juice.
