Ingredients
  

Base Ingredients

  • 1 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 3 large egg whites
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Combine fresh lemon juice and lemon zest with 1/4 cup of granulated sugar in a medium bowl. Whisk until sugar dissolves.
  • In another bowl, whip 1 cup of heavy whipping cream until soft peaks form, about 3 to 5 minutes. Set aside in the refrigerator.
  • In a separate bowl, beat 3 large egg whites with 1/4 teaspoon of salt until stiff peaks form. Fold in the lemon mixture into the whipped cream, then gently fold in the beaten egg whites.
  • Spoon the mixture into serving dishes, cover with plastic wrap, and refrigerate for at least 120 minutes to chill.
