Base Ingredients
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest (from about 1 lemon)
- 3 large egg whites
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Combine fresh lemon juice and lemon zest with 1/4 cup of granulated sugar in a medium bowl. Whisk until sugar dissolves.
In another bowl, whip 1 cup of heavy whipping cream until soft peaks form, about 3 to 5 minutes. Set aside in the refrigerator.
In a separate bowl, beat 3 large egg whites with 1/4 teaspoon of salt until stiff peaks form. Fold in the lemon mixture into the whipped cream, then gently fold in the beaten egg whites.
Spoon the mixture into serving dishes, cover with plastic wrap, and refrigerate for at least 120 minutes to chill.
