Chicken

  • 2 pounds boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Marinate the chicken by whisking together olive oil, lemon juice, honey, garlic, oregano, thyme, salt, black pepper, and red pepper flakes. Coat the chicken thoroughly and let it marinate in the refrigerator for at least 30 minutes.
  • Preheat the grill to medium-high heat and lightly oil the grates.
  • Grill the chicken for 6-7 minutes on each side until it reaches an internal temperature of 165°F.
  • Let the chicken rest for 5 minutes before slicing and garnish with fresh parsley.
