Chicken Thighs

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup frozen peas
  • 1 whole lemon, juiced and zested
  • 1/4 cup fresh parsley, chopped

Instructions
 

  • Marinate the chicken by mixing olive oil, salt, black pepper, garlic powder, onion powder, thyme, and rosemary. Let it sit for at least 30 minutes.
  • Rinse the long-grain white rice under cold water until the water runs clear, then drain well.
  • Sear the marinated chicken thighs in a skillet over medium-high heat for 3-4 minutes on each side until golden brown.
  • In the slow cooker, place the chicken thighs at the bottom, add the rinsed rice on top, and pour the chicken broth over everything. Cook on low for 4-5 hours or high for 2-3 hours.
  • About 15 minutes before serving, stir in the frozen peas, lemon juice, and lemon zest. Fluff the rice with a fork and garnish with fresh parsley before serving.
