Chicken Thighs
- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 cup frozen peas
- 1 whole lemon, juiced and zested
- 1/4 cup fresh parsley, chopped
Marinate the chicken by mixing olive oil, salt, black pepper, garlic powder, onion powder, thyme, and rosemary. Let it sit for at least 30 minutes.
Rinse the long-grain white rice under cold water until the water runs clear, then drain well.
Sear the marinated chicken thighs in a skillet over medium-high heat for 3-4 minutes on each side until golden brown.
In the slow cooker, place the chicken thighs at the bottom, add the rinsed rice on top, and pour the chicken broth over everything. Cook on low for 4-5 hours or high for 2-3 hours.
About 15 minutes before serving, stir in the frozen peas, lemon juice, and lemon zest. Fluff the rice with a fork and garnish with fresh parsley before serving.
