Gather all your ingredients to make the process smoother.
In a mixing bowl, combine the unsweetened shredded coconut, almond flour, maple syrup, melted coconut oil, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Mix until it forms a sticky dough.
Refrigerate the mixture for 30 minutes to firm it up. After chilling, roll the mixture into small balls, about 1 inch in diameter.
Melt the white chocolate chips in a microwave-safe bowl. Dip each truffle into the chocolate and place them on a parchment-lined baking sheet.
Chill the coated truffles in the refrigerator for 15-20 minutes to allow the chocolate to harden.
