  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tablespoon lemon zest (about 1 lemon)
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 1/4 cup white chocolate chips (optional, for coating)

Instructions
 

  • Gather all your ingredients to make the process smoother.
  • In a mixing bowl, combine the unsweetened shredded coconut, almond flour, maple syrup, melted coconut oil, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Mix until it forms a sticky dough.
  • Refrigerate the mixture for 30 minutes to firm it up. After chilling, roll the mixture into small balls, about 1 inch in diameter.
  • Melt the white chocolate chips in a microwave-safe bowl. Dip each truffle into the chocolate and place them on a parchment-lined baking sheet.
  • Chill the coated truffles in the refrigerator for 15-20 minutes to allow the chocolate to harden.
