Ingredients
- 3 tablespoons olive oil
- 1 medium onion, diced
- 2 pieces carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 cup orzo pasta
- 2 cups cooked, shredded chicken
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Shred your cooked chicken and set aside.
Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened. Stir in minced garlic and cook for an additional minute.
Add chicken broth to the pot and bring to a boil. Once boiling, add orzo pasta and cook according to package instructions, about 8-10 minutes.
Stir in shredded chicken, fresh lemon juice, lemon zest, and dried oregano. Season with salt and pepper to taste. Let it simmer for a few minutes.
Remove from heat and stir in chopped fresh parsley. Let sit for a few minutes before serving.
