- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound ground beef or Italian sausage
- 28 ounces crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Gather all your ingredients to make the cooking process smoother.
Heat olive oil in a large pot over medium heat. Sauté diced onion for 5 minutes until soft, then add minced garlic and cook for 1 minute.
Add ground beef or Italian sausage, cooking until browned (5 to 7 minutes). Drain excess fat, then stir in crushed tomatoes, broth, dried basil, oregano, salt, and pepper. Bring to a boil, reduce heat, and add broken lasagna noodles. Cook for 10 to 12 minutes until noodles are tender.
In a separate bowl, mix ricotta cheese, half of the mozzarella, and half of the Parmesan. Once noodles are cooked, serve soup in bowls and top with the ricotta mixture and remaining cheeses.
Let the soup simmer for a few more minutes, garnish with fresh basil if desired, and serve hot.
