Kielbasa and Pierogi Casserole Ingredients

  • 2 cups frozen pierogi Choose cheese or potato-filled.
  • 12 ounces kielbasa Slice into rounds.
  • 1 medium onion Diced.
  • 2 cups sauerkraut Drained and rinsed.
  • 1 cup shredded cheddar cheese For topping.
  • 1 cup sour cream Adds creaminess.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt and pepper To taste.
  • 2 tablespoons olive oil For sautéing.
  • fresh parsley Chopped for garnish.

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Prep the ingredients: take the frozen pierogi out of the freezer, dice the onion, and slice the kielbasa into rounds.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent.
  • Add the sliced kielbasa to the skillet and cook for 5 to 7 minutes until browned.
  • In a large mixing bowl, combine the cooked kielbasa and onions with the frozen pierogi and drained sauerkraut. Add garlic powder, paprika, salt, and pepper, and mix well.
  • Transfer the mixture to a greased 9x13-inch baking dish. Dollop sour cream on top and sprinkle with shredded cheddar cheese.
  • Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  • Let cool for a few minutes before serving. Garnish with fresh parsley.
