- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
Wet Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups old-fashioned rolled oats
- 1 cup dried cranberries
- 1/2 cup chopped walnuts (optional)
Preheat your oven to 350°F (175°C).
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
Fold in the oats, cranberries, and walnuts (if using) until evenly distributed.
Drop rounded tablespoons of dough onto a prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes until the edges are lightly golden and the centers remain soft. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
