Dry Ingredients
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Wet Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 1 large egg yolk
- 1/2 cup chocolate chips (for filling)
Preheat your oven to 350°F (175°C). Gather and prep all ingredients.
In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. In a large bowl, cream butter with granulated and brown sugars until light and fluffy. Beat in vanilla and egg yolk. Gradually add dry mixture until just combined.
Scoop tablespoon-sized portions of dough, roll into balls, and place on a baking sheet, spacing them 2 inches apart. Create an indentation in the center of each cookie.
Bake for 10-12 minutes until set but still soft in the center. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Melt chocolate chips in a microwave-safe bowl. Fill each indentation with melted chocolate and allow to cool completely before serving.
