- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 teaspoon red pepper flakes (optional)
Preheat your oven to 400°F (200°C).
Cut the chicken into bite-sized pieces and marinate in olive oil, garlic, and herbs for 30 minutes if desired.
Wash and slice the zucchini into rounds, aiming for uniform thickness.
In a large mixing bowl, combine chicken, zucchini, cherry tomatoes, garlic, oregano, basil, salt, pepper, and red pepper flakes. Drizzle with olive oil and toss to coat.
