Honey Lime Chicken Avocado Rice Stack Ingredients
- 2 cups cooked white rice
- 1 pound boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice (about 2 limes)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
Marinate the chicken by whisking together honey, lime juice, olive oil, garlic powder, cumin, salt, and pepper. Coat the chicken and let it marinate in the refrigerator for at least 30 minutes.
