  • 2 cups cooked white rice
  • 1 pound boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions
 

  • Marinate the chicken by whisking together honey, lime juice, olive oil, garlic powder, cumin, salt, and pepper. Coat the chicken and let it marinate in the refrigerator for at least 30 minutes.
  • Preheat the grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side until fully cooked. Let it rest for 5 minutes before slicing.
  • Prepare the rice according to package instructions. Dice the avocado, halve the cherry tomatoes, and chop the cilantro.
  • Assemble the stack by layering rice, sliced chicken, avocado, and tomatoes. Drizzle with leftover marinade and garnish with cilantro. Serve with lime wedges.
