  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup uncooked elbow macaroni
  • 2 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions
 

  • Gather all ingredients, chop the onion, and mince the garlic.
  • In a large skillet, brown the ground beef over medium heat. Stir in the chopped onion and minced garlic. Cook until the meat is no longer pink, about 5-7.
  • Drain any excess fat. Add the diced tomatoes, kidney beans, frozen corn, and uncooked elbow macaroni to the skillet. Pour in the beef broth, and sprinkle in the chili powder, paprika, salt, and pepper. Stir until well combined.
  • Transfer the mixture to a greased 9x13-inch baking dish. Cover with aluminum foil and bake in a preheated oven at 350°F for 30.
  • After 30, remove the foil and sprinkle the shredded cheddar cheese on top. Return to the oven and bake for an additional 10-15 until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving.
