  • 4 cups cooked egg noodles Base of the casserole.

Instructions
 

  • Preheat your oven to 350°F. Gather and prep all ingredients by chopping the onion and bell pepper.
  • In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Drain excess fat, then add onion and bell pepper. Sauté for 5 minutes until softened.
  • Stir in frozen mixed vegetables, diced tomatoes, cream of mushroom soup, garlic powder, Italian seasoning, salt, and pepper. Mix well and let simmer for 5 minutes.
  • Combine the cooked egg noodles with the beef and vegetable mixture in a large mixing bowl. Transfer to a greased 9x13-inch baking dish and top with shredded cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes until cheese is melted and bubbly. Let cool for a few minutes before serving.

Notes

For a crispier top, consider broiling the casserole for the last few minutes of baking.
