Ingredients
  

Chicken Thighs

  • 4 pieces bone-in, skin-on chicken thighs about 1.5 pounds
  • 1/4 cup unsalted butter melted
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme chopped (or 1 teaspoon dried)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 piece lemon zested and juiced
  • 2 tablespoons olive oil
  • to taste fresh parsley chopped (for garnish)

Instructions
 

  • Pat the chicken thighs dry with paper towels and season both sides with salt and black pepper.
  • In a small bowl, combine melted butter, minced garlic, chopped rosemary, chopped thyme, lemon zest, and lemon juice. Mix until well combined.
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken thighs skin-side down for 5-7 minutes until golden brown and crispy.
  • Flip the chicken thighs over and pour the herb garlic butter mixture over them, ensuring they are well coated.
  • Transfer the skillet to the preheated oven and bake for 25-30 minutes until the internal temperature reaches 165°F. Let the chicken rest for 5 minutes before serving.
  • Garnish with freshly chopped parsley before serving.
