Chicken Thighs
- 4 pieces bone-in, skin-on chicken thighs about 1.5 pounds
- 1/4 cup unsalted butter melted
- 4 cloves garlic minced
- 1 tablespoon fresh rosemary chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme chopped (or 1 teaspoon dried)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 piece lemon zested and juiced
- 2 tablespoons olive oil
- to taste fresh parsley chopped (for garnish)
Pat the chicken thighs dry with paper towels and season both sides with salt and black pepper.
In a small bowl, combine melted butter, minced garlic, chopped rosemary, chopped thyme, lemon zest, and lemon juice. Mix until well combined.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken thighs skin-side down for 5-7 minutes until golden brown and crispy.
Flip the chicken thighs over and pour the herb garlic butter mixture over them, ensuring they are well coated.
Transfer the skillet to the preheated oven and bake for 25-30 minutes until the internal temperature reaches 165°F. Let the chicken rest for 5 minutes before serving.
Garnish with freshly chopped parsley before serving.
