Ground Beef
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 medium potatoes, diced
- 14.5 ounces can diced tomatoes, undrained
- 4 cups beef broth
- 1 cup frozen peas
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Prepare your ingredients by washing and peeling the carrots and potatoes. Slice the carrots and dice the potatoes. Chop the onion and mince the garlic.
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
Add the ground beef to the pot and brown for 5-7 minutes, stirring occasionally. Drain excess fat if necessary.
Stir in the sliced carrots, diced potatoes, and diced tomatoes. Pour in the beef broth, Worcestershire sauce, thyme, and oregano. Season with salt and pepper.
Bring to a boil, then reduce heat to low. Cover and let simmer for 30-35 minutes until vegetables are tender.
Add the frozen peas and cook for an additional 5 minutes. Adjust seasoning if needed before serving.
