Ingredients
  

Ground Beef

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 14.5 ounces can diced tomatoes, undrained
  • 4 cups beef broth
  • 1 cup frozen peas
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions
 

  • Prepare your ingredients by washing and peeling the carrots and potatoes. Slice the carrots and dice the potatoes. Chop the onion and mince the garlic.
  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
  • Add the ground beef to the pot and brown for 5-7 minutes, stirring occasionally. Drain excess fat if necessary.
  • Stir in the sliced carrots, diced potatoes, and diced tomatoes. Pour in the beef broth, Worcestershire sauce, thyme, and oregano. Season with salt and pepper.
  • Bring to a boil, then reduce heat to low. Cover and let simmer for 30-35 minutes until vegetables are tender.
  • Add the frozen peas and cook for an additional 5 minutes. Adjust seasoning if needed before serving.
