Ground Beef

  • 1 pound ground beef Main protein source.

  • 1 can (14.5 ounces) diced tomatoes, undrained Contributes acidity.
  • 4 cups beef broth Liquid base for the stew.

Instructions
 

  • Wash and chop all vegetables. Dice the onion, mince the garlic, slice the carrots, and dice the potatoes.
  • Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic for 3-4 minutes until translucent.
  • Add ground beef to the pot, breaking it apart as it cooks. Brown for 5-7 minutes until cooked through.
  • Stir in sliced carrots and diced potatoes. Add diced tomatoes, beef broth, thyme, oregano, salt, and pepper.
  • Bring to a boil, then reduce heat to low and cover. Let it simmer for 30-40 minutes until vegetables are tender.
  • Stir in frozen peas and cook for an additional 5 minutes. Adjust seasoning if needed before serving.
