Wash and chop all vegetables. Dice the onion, mince the garlic, slice the carrots, and dice the potatoes.

Add ground beef to the pot, breaking it apart as it cooks. Brown for 5-7 minutes until cooked through.
Stir in sliced carrots and diced potatoes. Add diced tomatoes, beef broth, thyme, oregano, salt, and pepper.
Bring to a boil, then reduce heat to low and cover. Let it simmer for 30-40 minutes until vegetables are tender.
Stir in frozen peas and cook for an additional 5 minutes. Adjust seasoning if needed before serving.
