- 3 tablespoons olive oil
- 1 medium onion, diced
- 2 pieces carrots, sliced
- 2 pieces celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 piece bay leaf
- 8 ounces egg noodles
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Gather all your ingredients to ensure a smooth cooking process.
If using raw chicken, cook it in advance and shred it into bite-sized pieces.
In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and sliced celery. Sauté for about 5 minutes until softened.
Stir in the minced garlic and cook for an additional minute. Pour in the chicken broth and bring to a boil.
Add the shredded chicken, dried thyme, dried parsley, and bay leaf. Reduce heat and let it simmer for 15 minutes.
Add the egg noodles and cook according to package instructions, usually about 6-8 minutes, until tender.
Season with salt and pepper to taste. Remove the bay leaf before serving. Garnish with fresh parsley.
