Beef
- 2 pounds beef chuck Cut into 1-inch cubes.
- 1 tablespoon olive oil Used for browning the beef.
- 1 medium onion Chopped.
- 3 cloves garlic Minced.
- 4 cups beef broth Base of the stew.
- 2 cups carrots Sliced.
- 2 cups potatoes Diced.
- 1 cup celery Chopped.
- 1 tablespoon tomato paste Deepens flavor.
- 1 teaspoon dried thyme Classic herb.
- 1 teaspoon dried rosemary Adds fragrance.
- 2 leaves bay leaves Infuses flavor.
- salt and pepper To taste.
- 2 tablespoons all-purpose flour Optional for thickening.
- fresh parsley Chopped, for garnish.
Prepare all ingredients by washing and chopping vegetables, cutting beef into cubes, and mincing garlic.
In a large pot, heat olive oil over medium-high heat and brown the beef cubes for 5-7 minutes.
Sauté chopped onion in the same pot for 3-4 minutes, then add minced garlic and cook for 1 more minute.
Return browned beef to the pot, add beef broth, carrots, potatoes, celery, tomato paste, thyme, rosemary, and bay leaves. Stir and bring to a boil.
Reduce heat to low, cover, and let simmer for 90-120 minutes.
If desired, mix flour with cold water to create a slurry and stir into the stew during the last 10 minutes of cooking.
Taste and adjust seasoning before serving, removing bay leaves and garnishing with fresh parsley.
