Instructions
 

  • Heat a large pot over medium heat. Add ground beef and cook until browned, about 5-7. Drain excess fat.
  • Add chopped onion and minced garlic. Sauté for about 3-4 until onion is translucent.
  • Stir in black beans, corn, diced tomatoes, and beef broth. Season with chili powder, cumin, paprika, salt, and pepper.
  • Pour in enchilada sauce and stir until well combined.
  • Bring to a boil, then reduce heat to low and let simmer for about 20, stirring occasionally.
  • Taste and adjust seasoning if needed. Serve hot topped with cheese and cilantro, with tortilla chips on the side.
