Dough Ingredients
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1/2 teaspoon vanilla extract
Filling Ingredients
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup crushed pineapple, drained
- 1/2 teaspoon coconut extract
- 1/4 cup shredded coconut (optional)
- 1 egg egg wash (1 egg beaten with 1 tablespoon water)
Mix dry ingredients for the dough in a bowl, then add butter and mix until coarse crumbs form. Stir in egg and vanilla extract, then refrigerate for 15 minutes.
Beat cream cheese and powdered sugar until smooth, then mix in crushed pineapple and coconut extract.
Roll out the chilled dough, cut into squares, fill with cream cheese mixture, fold and seal.
Preheat oven to 375°F, brush with egg wash, bake for 20-25 minutes until golden brown.
