For the Grilled Cod
- 1 pound cod fillets
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Lemon wedges for serving
For the Romesco Sauce
- 1 cup roasted red peppers (jarred or homemade)
- 1/4 cup almonds toasted
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic minced
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Prepare the Romesco sauce by blending roasted red peppers, toasted almonds, extra virgin olive oil, red wine vinegar, minced garlic, smoked paprika, salt, and pepper until smooth. Set aside.
Marinate the cod fillets with a mixture of olive oil, garlic powder, paprika, salt, and pepper for 15-20 minutes.
Preheat the grill to medium-high heat and grill the marinated cod fillets for 4-5 minutes on each side until they flake easily with a fork.
Serve the grilled cod on a platter, drizzled with Romesco sauce and lemon wedges on the side.
