Dried yellow lentils
- 1 cup dried yellow lentils, rinsed and drained
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 0.5 teaspoon smoked paprika
- 4 cups vegetable broth
- 1 can diced tomatoes, undrained (14.5 ounces)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Gather your ingredients and have everything ready.
Wash and dice the onion, carrots, and celery. Mince the garlic.
In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until softened. Stir in the minced garlic, cumin, turmeric, and smoked paprika. Cook for an additional 1-2 minutes.
Add the rinsed yellow lentils, vegetable broth, and diced tomatoes to the pot. Stir and bring to a boil.
Once boiling, reduce heat to low, cover, and let simmer for 25-30 minutes until lentils are tender.
If desired, blend a portion of the soup for creaminess using an immersion blender.
Season with salt and pepper to taste. Adjust flavors as desired.
