Dried yellow lentils

  • 1 cup dried yellow lentils, rinsed and drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 1 can diced tomatoes, undrained (14.5 ounces)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Gather your ingredients and have everything ready.
  • Wash and dice the onion, carrots, and celery. Mince the garlic.
  • In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until softened. Stir in the minced garlic, cumin, turmeric, and smoked paprika. Cook for an additional 1-2 minutes.
  • Add the rinsed yellow lentils, vegetable broth, and diced tomatoes to the pot. Stir and bring to a boil.
  • Once boiling, reduce heat to low, cover, and let simmer for 25-30 minutes until lentils are tender.
  • If desired, blend a portion of the soup for creaminess using an immersion blender.
  • Season with salt and pepper to taste. Adjust flavors as desired.
