Instructions
 

  • Prepare your ingredients by dicing the onion, carrots, and celery, shredding the chicken, and mincing the garlic and grating the ginger.
  • If using raw chicken, cook it in water or sauté in olive oil until fully cooked, then shred.
  • In a large pot, heat olive oil over medium heat, sauté onion for 5 minutes, then add garlic and ginger for 1-2 minutes.
  • Add turmeric, cumin, black pepper, and salt to the pot, stirring to combine.
  • Pour in chicken broth, bring to a boil, then add chicken, brown rice, carrots, and celery. Reduce heat and simmer for 30-35 minutes.
  • Stir in lemon juice and zest, adjust seasoning, and serve hot garnished with parsley.
