Shrimp and Vegetables
- 1 pound large shrimp peeled and deveined
- 2 cups broccoli florets fresh
- 1 cup bell peppers any color
- 1 cup cherry tomatoes halved
- 4 tablespoons olive oil
- 4 cloves garlic minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 unit lemon juice of
- Fresh parsley chopped, for garnish
Prepare the shrimp by peeling and deveining them, then rinse and pat dry.
Chop the broccoli into bite-sized pieces, slice the bell peppers, and halve the cherry tomatoes.
In a small bowl, whisk together olive oil, minced garlic, paprika, oregano, salt, and pepper. Pour over shrimp and vegetables and toss to coat.
Preheat the oven to 400°F. Spread the mixture on a baking sheet and bake for 15-20 minutes until shrimp are pink and opaque.
Remove from oven, drizzle with lemon juice, toss gently, and serve.
