Shrimp and Vegetables

  • 1 pound large shrimp peeled and deveined
  • 2 cups broccoli florets fresh
  • 1 cup bell peppers any color
  • 1 cup cherry tomatoes halved
  • 4 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 unit lemon juice of
  • Fresh parsley chopped, for garnish

Instructions
 

  • Prepare the shrimp by peeling and deveining them, then rinse and pat dry.
  • Chop the broccoli into bite-sized pieces, slice the bell peppers, and halve the cherry tomatoes.
  • In a small bowl, whisk together olive oil, minced garlic, paprika, oregano, salt, and pepper. Pour over shrimp and vegetables and toss to coat.
  • Preheat the oven to 400°F. Spread the mixture on a baking sheet and bake for 15-20 minutes until shrimp are pink and opaque.
  • Remove from oven, drizzle with lemon juice, toss gently, and serve.
