Vegetables

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 cups carrots, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Wash the vegetables thoroughly. Cut the broccoli and cauliflower into bite-sized florets. Slice the carrots into thin rounds. Chop the red and yellow bell peppers into small pieces.
  • In a small bowl, whisk together the olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper.
  • Pour the herb mixture over the prepared vegetables in a large mixing bowl. Toss the vegetables gently until they are evenly coated.
  • Spread the coated vegetables in a single layer on a large baking sheet. Roast for 25-30 minutes, stirring halfway through.
  • Remove from the oven and sprinkle with fresh parsley before serving.
