- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 cups carrots, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Preheat your oven to 425°F (220°C).
Wash the vegetables thoroughly. Cut the broccoli and cauliflower into bite-sized florets. Slice the carrots into thin rounds. Chop the red and yellow bell peppers into small pieces.
In a small bowl, whisk together the olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper.
Pour the herb mixture over the prepared vegetables in a large mixing bowl. Toss the vegetables gently until they are evenly coated.
Spread the coated vegetables in a single layer on a large baking sheet. Roast for 25-30 minutes, stirring halfway through.
Remove from the oven and sprinkle with fresh parsley before serving.
