Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach
- 1 pound potato gnocchi
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 bunch Fresh basil for garnish (optional)
Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook for 5-7 minutes until browned. Remove and set aside.
Cook gnocchi in salted water until they float, about 2-3 minutes. Drain and set aside.
In the same skillet, sauté minced garlic for 30 seconds. Add cherry tomatoes and cook for 2-3 minutes until softened.
Stir in baby spinach and cook until wilted, about 1 minute. Add cooked gnocchi, chicken broth, and heavy cream. Simmer for 5 minutes until gnocchi are tender and sauce thickens.
Return chicken to skillet, add Parmesan cheese and Italian seasoning. Stir and cook for an additional 2-3 minutes until heated through.
