Instructions
 

  • Let the ribeye steak sit at room temperature for 30 minutes. Season both sides with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Add unsalted butter and let it melt. Sauté minced garlic for 1 minute until fragrant.
  • Sear the seasoned ribeye in the skillet for 4-5 minutes on each side for medium-rare. Remove and let it rest.
  • In the same skillet, reduce heat to medium, add heavy cream, and bring to a gentle simmer. Stir in grated Parmesan cheese and Italian seasoning. Cook for 3-4 minutes until thickened.
  • Slice the rested steak against the grain, return to the skillet, and toss in the creamy Parmesan sauce. Add remaining butter and stir until melted.
