Chicken
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 lemon Juice of
- Fresh parsley, chopped (for garnish)
Cut the chicken into bite-sized pieces and season with salt, pepper, and Italian seasoning.
Melt 2 tablespoons of butter in a large skillet over medium heat, then sauté minced garlic for about 1 minute.
Add the seasoned chicken to the skillet and cook for 5-7 minutes until golden brown and fully cooked.
Remove the chicken and add the remaining butter and halved cherry tomatoes to the skillet, cooking for 2-3 minutes.
Stir in the spinach and cook until wilted, about 1-2 minutes, then return the chicken to the skillet, add lemon juice, and toss everything together.
Cook for an additional minute to heat through and serve garnished with fresh parsley.
