Chicken

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 lemon Juice of
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Cut the chicken into bite-sized pieces and season with salt, pepper, and Italian seasoning.
  • Melt 2 tablespoons of butter in a large skillet over medium heat, then sauté minced garlic for about 1 minute.
  • Add the seasoned chicken to the skillet and cook for 5-7 minutes until golden brown and fully cooked.
  • Remove the chicken and add the remaining butter and halved cherry tomatoes to the skillet, cooking for 2-3 minutes.
  • Stir in the spinach and cook until wilted, about 1-2 minutes, then return the chicken to the skillet, add lemon juice, and toss everything together.
  • Cook for an additional minute to heat through and serve garnished with fresh parsley.
