Beef and Potatoes
- 1 pound beef sirloin Cut into 1-inch cubes.
- 1 pound baby potatoes Halved.
- 4 tablespoons unsalted butter Divided for cooking.
- 4 cloves garlic Minced.
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- to taste salt and pepper
- 2 tablespoons olive oil For roasting the potatoes.
- to taste fresh parsley Chopped for garnish.
Prepare the ingredients by cutting the beef into cubes, halving the potatoes, and mincing the garlic.
Heat a skillet over medium-high heat, melt 2 tablespoons of butter, and sear the beef cubes for 2-3 minutes on each side.
In the same skillet, melt the remaining 2 tablespoons of butter and sauté the halved potatoes for 5-7 minutes.
Combine the seared beef with the sautéed potatoes in the skillet and mix well.
Add minced garlic, toss to coat, and transfer to a preheated oven to roast for 10-15 minutes.
