  • 2 cups cooked orzo pasta
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cups low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Gruyère cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Prepare the chicken by dicing it into bite-sized pieces and seasoning with salt and pepper.
  • Sauté the onions in olive oil over medium heat for 10-12 minutes until caramelized.
  • Cook the orzo according to package instructions, usually about 8-10 minutes, then drain.
  • Combine cooked orzo, diced chicken, caramelized onions, chicken broth, garlic powder, and thyme in a large mixing bowl. Season with salt and pepper.
  • Transfer the mixture to a greased 9x13 inch baking dish, top with mozzarella and Gruyère cheese, cover with foil, and bake at 375°F for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  • Let cool for a few minutes before serving and garnish with fresh parsley.
