Tortillas

  • 8 large flour tortillas
  • 12 ounces thinly sliced roast beef
  • 8 ounces provolone cheese, sliced
  • 1 cup au jus store-bought or homemade
  • 1 tablespoon Dijon mustard
  • 1 tablespoon mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped optional
  • Salt and pepper to taste

Instructions
 

  • Gather all your ingredients to make the process smoother.
  • Prepare the meat by slicing it thinly if using leftover roast beef.
  • Assemble the roll-ups by spreading the mustard-mayo mixture on the tortilla, layering roast beef and provolone cheese, and adding parsley if desired.
  • Roll the tortilla tightly and secure with a toothpick if needed.
  • Slice the roll-ups into 1-inch pieces and serve with warm au jus.

Notes

Consider warming tortillas slightly before assembling for easier rolling.
