Dumpling Ingredients
- 2 cups chicken broth
- 1 cup water
- 2 packs instant ramen noodles (3 oz each)
- 1 cup frozen dumplings (pork or chicken)
- 1 cup baby spinach
- 1 piece carrot julienned
- 2 pieces green onions sliced
- 2 teaspoons soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon garlic minced
- 1 teaspoon ginger minced
- Salt and pepper to taste
- 1 piece soft-boiled egg optional
In a large pot, combine the chicken broth and water. Bring to a gentle simmer over medium heat. Add the frozen dumplings and cook according to package instructions, about 5-7 minutes.
In a separate pot, bring water to a boil. Add the instant ramen noodles and cook according to package instructions, about 3-4 minutes. Drain and set aside.
Add the baby spinach, julienned carrot, soy sauce, sesame oil, minced garlic, and minced ginger to the pot with the dumplings. Stir and cook for an additional 2-3 minutes. Season with salt and pepper to taste.
Divide the cooked ramen noodles into individual bowls. Ladle the dumpling broth and vegetables over the noodles. Top with a soft-boiled egg and garnish with sliced green onions.
