Base Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup bell pepper, diced any color
  • 1 can chickpeas, drained and rinsed (15 ounces)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced (optional)
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Wash and chop the romaine lettuce, slice the cherry tomatoes in half, dice the cucumber, slice the red onion thinly, and dice the bell pepper.
  • In a small bowl, mix olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
  • In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, diced cucumber, sliced red onion, diced bell pepper, and drained chickpeas. Pour the dressing over and toss gently.
  • Let the salad sit for 10 minutes to allow flavors to meld, then serve.

Notes

For added protein, consider adding grilled chicken or shrimp.
